Manual player selection
during a play where you see your defender about to make a mistake, instead of only having one button to switch to the player with the best chance of making a play a button could be assigned (like L3) to bring up a player selection screen that would assign a button to all the dbs and lbs. so if you saw your safety about to get burned deep you would click the L3 an assigned button would appear over his head, you would click that button and be in control of the safety.

save your friends profile
do something like nfl 2k5's "V.I.P. System: After your game, save your friend's profile to compete when he is not available! Learn his tendencies, moves, and logic for more heated battles..." ign.com

Play Action
When you're controling the Quaterback, they should a button to press for a play action. Just like they have a button to press for a fake pass, well have a button to press for a play action as well. You can press it twice to do a play action to the FB & RB.

Accept or Decline a False Start penalty
You know if you have a False Start penalty after the 2 minute warning, they will take 10 seconds off the game clock. Well the offence could be winning the game, trying to run down the clock, and they could try to make their team False Start on purpose just to get 10 seconds off the game clock. The defense might want to decline that penalty, to keep all the time on the clock after the 2 minute warning.
Or on 4th Down when they're about to punt the ball, sometimes they want to go back a little to keep it from being a Touchback. Well they be try a Delay of Game penalty, sometimes the defense decline that penalty, because they know what they're trying to do. Then the offence make their team False Start, then the defense don't have no choice, they have to accept that penalty. We should have a choice if we want to accept or decline a False Start penalty too. -

Reach out
When we're short of the First Down mark or the Goal Line, they can have a button to press to stretch our arm to reach the ball out so we can get the First Down, Touchdown, or an extra yard. Just like they do in NFL.
Make that "Reach Out" be a risk of a Fumble so people won't be doing it on every tackle. -
